
All Pali wines are handcrafted by winemaker, Brian Loring, in small (three-quarter ton) fermentors. They are aged 10 months in 50% new and 50% used French oak, racked once during barrel aging, and bottled unfined and unfiltered. All bottles are closed with Stelvin screw caps to ensure that all customers get out of the bottle exactly what winemaker puts into the bottle. Winemaking practices result in wines that are true expressions of both; the vintage and the vineyard from which the grapes are sourced. The total production in the 2005 vintage was very small (1,340 cases).
