The house was founded in 1986 by Anne and Philippe Gimonnet, both being descendants of long lines of Champenois, most notably their grandparents who in the 1930s took stead in the C͉ôtes de Blancs - a key part of the Gimonnet’s production with Grand Cru vineyards overlooking those of Krug and Salon. Their ethos is simple: making Champagne is so much more than a job; it’s an irresistible passion. Their vineyard holdings are comprised of a mere 13.5 hectares, 6 of which are classified as Grand Cru and are located in Le-Mesnil-sur-Oger, Chouilly, Oiry, Cramant and Oger. The seven other hectares (Pinot Noir & Pinot Meunier) are planted in the Marne Valley in the villages of Vincelles, Verneuil and Troissy. The average age of the vines is quite high (40 years on average). All work in the vineyard is done in what the French called raisonné (sustained), fighting against parasites and mold without chemicals; weeding is done by tractor. Harvesting is done by hand and the grapes then undergo two presses; one vertical, the other pneumatic. Primary and malolactic fermentation are done in small, individual steel vats, vinified by parcel then blended later. All cuvees see a minimum of three years on lees and are disgorged six months before release. As of 2012, winemaking is now fully in Charles, Anne and Phillippes’s son’s, able hands. Having grown up working side by side with his father in the cellar and vineyards, Charles continues to solidify this property as one of the best values in Grower Champagne.
